  2. 1 cup Wheat flour
  3. 1 cup Maida
  4. Salt as per taste
  5. 1 tbsp Refined oil
  6. 3/4 cup Spinach puree

  8. As required Oil for deep frying

  10. For Spinach puree
  11. 200 grams Spinach
  12. 1 Green chilli
  13. 6-7 Garlic cloves
  14. 1/2 inch Ginger piece
  15. For cheesy chickpeas
  16. 1 bowl Chickpeas
  17. 1 bowl Chopped green red and yellow capsicum
  18. 1 cup Milk
  19. 1 cup Cooked rice
  20. 2 tbsp Cheese(mozzarella cheese)
  21. 2 tbsp Oil
  22. 1 Chopped onion
  23. 7-8 cloves Chopped garlic
  24. 1 Chopped tomato
  25. 1 tsp Chole masala
  26. 1 tsp Soya sauce
  27. 2 tbsp Vinegar
  28. As required Chilli sauce
  29. Salt as per taste
  30. As required Coriander leaves a few for garnishing

Steps to make Crispy spinach tacos stuffed with cheesy chickpeas

  1. Blanch the spinach along with green chillies garlic and ginger. Make puree in a blender and keep aside. In a pressure cooker add water salt and chickpeas and boil for 7 whistles. The chickpeas should become soft.
  2. Mix the ingredients for dough except water. Add spinach puree. Lightly mix. Add water and knead a semi stiff dough. Keep aside.
  3. Heat oil in a pan. Add the chopped onion and capsicum. Add the chopped garlic cloves.
  4. Add chopped tomatoes. Cook for 2 minutes. Add chole masala and mix. Add chilli sauce and stir.
  5. Add vinegar and mix well. Add soya sauce and give a quick stir.add the milk and mix. Add salt as required. Cook for 3 minutes.
  6. When milk starts boiling Add the rice boiled chickpeas and cheese. Quickly stir and mix well. Lower the flame and cook covered for 3 minutes till all the ingredients blend well. Lightly crush the chickpeas with the ladle. Check seasoning. Keep aside
  7. Pinch a big ball from the dough and roll it using a rolling pin. Cut equal round shapes with a cookie cutter or lid. On a skillet lightly cook the tacos adding oil and lowered flame. Remove and keep aside.
  8. Using toothpicks fasten the edges of the tacos as shown in picture. Give them a semi circle shape. Heat oil in a pan and deep fry the tacos till crisp. Remove the toothpicks when tacos are done.
  9. Fill the taco shells with the chickpea mixture and garnish with coriander leaves. The dish is "Ready To Serve".
